I saw my grandfather using a bottle and soil to make a seal on the graft. Are there any benefits or downsides to that?

At 4:15 or so he said to keep the weed away, to remove weed, near young whip grafted tree. Remove the weeds when they are 1" or less, not waiting for the weed to get up to waist height then remove.
Then he said to keep adequate moisture, to water. He said the other grafters not watering after grafting because they believed watering would make the tree weep sap and ruining the graft. -

I take it the gashes and drilling cause the tree to release hormones that then cause the tree to heal, and so heal the graft?
