vue - Goat and Lamb Stew with Basmati Rice
This video is about the preparation of Goat and Lamb Stew which is served with steamed basmati rice. This dish is done in a west african style. This dish is very tasty but contains a significant amount of chilies. We used different parts meat, which included Goat Intestines, Lamb Shoulder, Lamb Neck and Salted Beef. WE boiled the different types of meat in a pot to extract some nice juices. We transfer the boiled meats to fry in extra virgin olive oil. After the meat is fried, we will take it all out and replace it with chopped onion. The chopped onions will be sauteed in the remaining olive oil. The spices or flavors introduced in the video will added to the chopped onions. This includes ginger, garlic and scotch bonnet peppers. When the onions have turned brown then we add the chopped tomatoes. The curry powder and other substances are added after this. Finally the reserved fried meats will be applied to the intermediate stew to finalize the process. Basmati is a variety of long grain rice which is traditionally from North India and Pakistan. The areas of basmati rice production in India are in the states of Madhya Pradesh, Punjab, Haryana, Rajasthan, Jammu & Kashmir, Himachal Pradesh, Delhi, Uttarakhand, Uttar Pradesh and Bihar. India's total basmati production for the 2011/12 crop year that ended June was 5 million tonnes. Basmati was introduced to the Middle East by Indian traders. Through cultural exchange, it remains not only an important part of various Indian/ Pakistani cuisines but now is also used extensively in Persian, Arab and other Middle Eastern cuisines as well. India and Pakistan are the exclusive growers and exporters of this type of rice. Reference: http://en.wikipedia.org/wiki/Basmati
