QUINOA POHA Ingredients  ¾ Cup Quinoa (100gm)  1 ¼ Cup of water (250ml)  2 tea spoons chopped ginger  12-15 curry leaves  ½ cup onions cut into medium cubes  1/8 tsp turmeric powder  ¾ cup cooked peas  ½ cup chopped tomatoes  ¼ tsp chilli powder  Salt to taste  2 tsp lemon juice  2 Tb spoon chopped coriander  1 ½ Tb spoon oil Method 1. Washed quinoa with water, place in a pan with 250 ml of water, bring to a boil & simmer till it is done (It takes 15-20 Minutes). 2. Add oil to the pan, add mustard seed, ginger, curry leaves & mix. Add onion sauté for 30 seconds, add turmeric powder mix. Add peas, cooked quinoa, salt to taste, chilli powder, tomatoes, lemon juice, copped coriander mix & serve hot, garnish with coriander leaves. Quinoa (kinwa) Quinoa is a species of goosefoot. This grain has been called a super food, a term which is not in common use by dietitians and nutrition scientists. The grain is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Protein content is very high.
