vue - JACKFRUIT ENCHILADAS! (RECIPE?!) - #TastyTuesday
Thanks to all the vegans out there for helping me eat more plant based last year! I’m continuing into 2017 eating mostly plant based, but I’m not committed to any labels or strict diets. HUGE shoutout to HotForFood (http://www.youtube.com/user/hotforfoodblog) for inspiring me to try an original recipe with ingredients I have in my pantry! That was a first, and it was so wildly successful, we didn’t have ANY leftovers and Steve said it was the best thing I’ve ever made on Tasty Tuesday besides the tamales from 2015! Whoa. Was not expecting that in the slightest. Here’s the recipe if you want it: NIKKI'S JACKFRUIT ENCHILADAS: 1 can enchilada sauce 3 cloves garlic, minced 1 small onion, chopped 2 tablespoons green chiles (from a can) 8 oz. mushrooms, sliced 1 red bell pepper, diced 1 pkg tex mex jackfruit (or jackfruit from a can that you spice) 1 can black beans, drained and rinsed 1 can white corn, drained 1/2 tsp black ground pepper 1 tsp ground chipotle pepper 1 tsp ground cumin Corn tortillas (about 8-10) 2 pkgs Daiya Pepper Jack cheese (or regular cheese if you eat dairy) optional toppings: diced tomato, sliced black olives, avocado -preheat 350 degrees -sautee garlic and onion in 2 tbsp oil, until onions are translucent (about 3 min) -add mushrooms, bell pepper, 2 tbsp green chiles, corn and cook 5 min, stirring -add jackfruit and spices, sauté for 5 min until flavors soak in -grease 9X13 pan, ladle some enchilada sauce on bottom -warm tortillas in microwave, dip tortilla in enchilada sauce, fill with filling and beans and sprinkle cheese -roll and put in pan, repeating until pan is full -Ladle enchilada sauce on top (enough to cover), and sprinkle remaining cheese until covered -cook for 20 minutes -add diced tomatoes/olives/guacamole Adapted from these recipes: http://www.gimmesomeoven.com/best-chicken-enchiladas-ever/ and http://keepinitkind.com/jackfruit-enchiladas/ YESTERDAY'S VIDEO: http://bit.ly/NikkiBali FIND ME HERE TOO: INSTAGRAM: http://www.instagram.com/nikkilimo FACEBOOK: http://www.facebook.com/officialnikkilimo TWITTER: http://www.twitter.com/nikkilimo SNAPCHAT: nikkilimo T-SHIRTS: http://www.nikkilimo.spreadshirt.com TUMBLR: http://nikkilimo.tumblr.com WRITE TO ME: Nikki Limo 11271 Ventura Blvd. #159 Studio City, CA 91604 Thanks for watching my stupid youtube channel. I would say don't put the tortillas on a plate with sauce while loading. It makes them too soft and wet and that is probably why it fell apart. It looks awesome and sounds tasty though! :D Good job!

i found that if you use to much of that cheese it get really gooey like gak! did this happen to you ?

If you coat the enchiladas in the sauce but them in hot oil and let them soften as in take them out before the fry. Put them on a pan at a slight angle to let the oil run off wen you stuff them they wont crack like that.

I respect your opinion and decision on diet, Nikki. You're doing what works for you. A lot of people who label themselves as "vegan" need to learn a thing or two from you. I'm glad you're happy with your own decision. c: Also, I encourage you to come up with more original recipes in 2017. I admire what you've done, veganism/vegetarianism are not for everyone. I have been vegetarian my whole life and I think my body would hate me if I became a meat and fish eater.

If you want to bring back dry tortillas, put them in a ziplock bag, add a little water and nuke them in the microwave for like 10-15 seconds to steam them a little. It will help stop them from breaking.
