I like to make a soup from Shiitake, Enoki and Oyster mushrooms. It's so good... if you want you can add some white truffle oil at the end but it's really not necessary because they already have such a rich earthy/nutty taste.

Hello American colleagues! I solved the problem with slugs, as the field is leveled, making sand, and network Agretela top gravel. Otherwise, the mushrooms will be damaged to 50%. Ice melting in the bath for 24 hours rank places. Success !

Damn guys, that's to much work with all those holes. Try shaving about one 10th off a single side of each log, place one flat on the ground with the shaved face facing upward, place your inoculated / colonized medium on the top and sandwich it using the other stump. Can be done vertically too although obviously something is required to keep them tied together. Alternatively keep them flat until properly colonized and then place them vertically. So much simpler and yields might even increase.

Guinea fowl are excellent for pest control, and they don't scratch up the place and make mud pits. Also I use hydrated lime to control slugs..spread directly on ground...plus mushrooms like the PH

Put out beer in shallow cups to kill slugs. Works great!

Seems like a shame to use good maple like that.
I wonder if using logs of compressed chopped brush and trimmings or chips would work well.

Nice to see this sort of venture, creativity, and enthusiasm. Pretty neat. I will always buy US-grown shiitake rather than ones from China. Nothing against Chinese people but I can't trust products from China. On principle I want to buy local and eat fresh mushrooms rather than dried ones anyway. Nice work.
