Most of the time, the wasabi you get in a restaurant or buy in a store is fake. It’s actually horseradish that’s colored green. Why? Well, wasabi is a notoriously difficult plant to grow. In fact, it’s considered the most difficult plant in the world to farm commercially. Yet for the past century, the Daio Wasabi Farm in Hokata, Japan, has been growing it successfully with natural spring water from nearby mountains. HonWasabi is too expensive, the cost around 2,000 yen, and you would barely find it at FishMarket like Tsukiji

This 90% fake rate, of course, includes Japan. Unless you go to expensive high end restaurants, you are served fake wasabi EVEN in Japan. I'm sure most of Japanese don't know the taste of real wasabi, either. If you pay $100 or more for sushi at a restaurant, wasabi can be real. If you pay $200 or more, it should be real.
